The aim? “Creating a culinary network, in order to rediscover territories. Basically, a way from a lighthouse to another, where the microclimate will dictate the ingredients that the chefs will make use of. Moreover, these chefs will be chosen from a long list of Marchesi’s apprentices”. An itinerary with summer local cooking as a central idea.
What about low season? “The seven lighthouses will turn into a widespread Academy . We come from the Milanese Academy’s experience and therefore, we decided to open a widespread Academy, involving Tuscany, Campania, Sicily. It will concern not only lessons dedicated to enthusiasts with the purpose of becoming acquainted with local cooking , but also lessons to professionals”.
