Many elements come together here to carry us to Ibiza, and specifically the olive groves of the Es Trull de Can Miquel Guasch. This estate is one of the largest producers of extra-virgin olive oil on the island, and Arbequina, Picual and Empeltre olive trees fill its lands.
The father and sons that run the Guasch family business decided to innovate and open an Oleoteca, or tasting site, in rural Ibiza. The idea was to create a space that would be a haven of peace, encircled by olive groves and nestled in the natural beauty of the island. The name, “Ses Escoles,” comes from the building’s previous purpose as the region’s school.
Tradition and knowledge of local artisanal crafts were central to developing a project that would be both detailed and strongly bound to Ibizan culture. The space offers tastings and also sells products and artisanal work from the surrounding area.
The design seeks to bring multiple experiences to life. A charming entrance allows visitors to taste products, sharing a table. There is also a dining room centred around a biomass stove, and a large bar in the heart of the building. The oleoteca also spills outdoors onto a patio covered with woven plants, reminiscent of the esparto grass and palm textiles typical of Ibiza.
Tradition and modernity unite and are seamlessly blended in this wide and appealing tasting space, providing the ultimate gourmet olive oil experience.
